How do you like these apples?

Just over a week ago I was lucky enough to drive past some windfall apples left on the roadside by a generous household. I quickly pulled over and picked up the bag which was full to the brim of huge Bramley apples.

Straight away it got me thinking about how to make use of these autumnal beauties and I thought it would be a good opportunity to try out some new recipes. I’ve always liked the saying ‘An apple a day…’ so I gave it a twist and it became #5apples5days5ways. This hashtag on Instagram was well received and people were only too happy to share their own apple recipes.

Spiced Eve’s Pudding
Here I wanted to share my favourite recipe with you for a Spiced Eve’s Pudding – a delicious apple cake which tastes of pure Autumn. The recipe, courtesy of Mary Berry, is so easy and uses baking cupboard staples so should be very easy for you to create in your own kitchen. I made a few changes of my own as I was baking so below is the Mary Berry recipe and method complete with my own adaptations.

Ingredients
3 large Bramley/cooking apples
Demerara Sugar (enough to sprinkle)
2 eggs
4oz caster sugar
4oz self-raising flour
4oz butter/baking spread
1tsp vanilla essence
1tsp mixed spice
Icing sugar (to dust)

Method
Heat your oven to 160C (fan), 320F or Gas Mark 3. Grease a cake tin or loaf tin with butter and sprinkle a generous helping of demerara sugar on the base. Grate the apples (using a food processor if you have one) discarding the coarse skin. Place the grated apple in a sieve or muslin and squeeze out the excess juice. Then, place the grated apple on top of the sugared base.

Cream the butter and caster sugar until fluffy. Add the beaten eggs and vanilla essence. Sift in the flour and mixed spice. When the mixture resembles cake mix, pour it over the grated apple.

Place the cake tin on to the middle shelf of your oven and bake for approximately 45 minutes until golden brown. Once baked, remove from the oven and leave to cool in the tin. Once cool, turn the cake tin upside down so that the caramelised apple layer is on the top. Dust with icing sugar and serve warm with vanilla ice cream.
